Get StartedCreating the “pura cucina Italiana” is about uncompromising ingredients, magnificent wines, and an ambience that strikes the elusive but quintessential Italian balance: Rich, but not overwhelming. Elegant, but not formal.
Diners are greeted in Italian and welcomed by a staff that reflects the iconic faces of Italy. The warmth of the room is evoked with rich Italian palissander wood. An uncluttered table layout sets the stage for a genuine urban-Italian experience.
Roberto’s aperitivo approach starts with complimentary pizza bianco and finishes with Italian nougat. In the kitchen, a limited number of meticulously selected Italian ingredients and seasonal produce are simply prepared to let the flavors speak for themselves. Freshly made pasta. Bistecca Fiorentina. Simple, traditional dishes. Roberto’s wine service and high-end grappa experience would be at home in any Italian city, with the bar being anchored by a Van De Westen espresso machine.
Guided by his deep Italian heritage, Roberto Payer launched the first Roberto’s in 1995 at the Amsterdam Hilton. The success of his vision—refined over the course of more than
a decade—offers a proven strategy for properties looking to implement an upscale Italian dining concept.
Quality was paramount in creating Roberto’s. To ensure the restaurant met the highest standards, Roberto kept a close eye on the delivery of the food and service and was actively involved with the development of the recipes and menus. He was in the kitchen daily — scrutinizing every dish.
But Roberto’s embraces more about Italy than the food alone. Mr. Payer was very focused on the lifestyle, fashion and design elements that established 1950s Italy as the epicenter for style and elegance. This aesthetic is reflected throughout the design and operations of Roberto’s. To the discerning eye, Roberto's can be easily recognized as a continuation of that timeless flair—updated for modern diners.
The Italian connection in the composition of our staff is an integral part of the Roberto’s experience. Just as putting a Hyundai engine in a Maserati would be an unspeakable compromise, so too, the people who bring Roberto’s to life must be “true Italians” (at least in their hearts!) A server’s pace, language and knowledge must reflect a deep familiarity with Italian culture and customs. Guests are greeted by a dedicated host/ess with an Italian salutation, wine service is equal to that found in Italy and pasta is served with only a fork — just as it is in Italy.
Food items are mostly prepared in the kitchen, but service adds finishing touches at the table such as grating Parmesan cheese, uncovering the Sea Bass and perhaps table preparation of a Bollito Mista.
As a rule, six to eight tables are reserved per half hour, so that highly attentive service is spread over the evening as evenly as possible.
Roberto’s design concept is based on Milanese eateries from the 1950s. Natural Italian materials, with rich palissander wood as the dominant element, stylish furniture and Italian lighting features, all establish Roberto's elegant ambience. During the day, these materials are shown in full splendor while at night they create a warm, intimate environment.
Roberto's original location in Amsterdam is an 80-seat restaurant with a 40-seat private room attached for overflow. Having a flexible room adjacent to the main dining area allows managers to keep occupancy to optimal levels avoiding the need to put diners in an overly large, sparsely occupied space.
The 80-seat layout is based on a 250-room hotel with good local market conditions. For hotels with 400+ rooms, a 120-seat layout has been created, including an adjacent 80-seat room for breakfast overflow.

Roberto’s menu pays tribute to the legacy of Italian cuisine and its ingredients. By insisting on only the best products and produce, the kitchen can limit the number of ingredients in the composition of the dishes and let the flavors speak for themselves. If quality Italian products cannot be source locally, they are imported.

Food standards are discussed on a daily basis. New dishes, inspired by seasonal ingredients may be tried and tested via the Weekly Menu which features two antipasti, two primi, two secondi and two dolci.
Featured cheeses may be ordered singularly or as a trio (e.g. Gorgonzola dolce, Tuscan pecorino and Lombardian Taleggio). Our gelatti are homemade in small batches and divided into gelato classici (classic flavors), stagionali (seasonal) and sperimentali (“experimental” tastes like basil or Parmesan!)
Exquisite red and white wines from each of Italy’s 35 DOCG regions are available at Roberto’s, showcased in
our gleaming cabinet between the bar and dining areas.
A carefully curated selection of 14 whites and 22 reds
includes a range from the deliciously affordable to the luxuriously exclusive. (Local tastes should guide the list’s expansion or adjustment.)
Roberto’s offers diners a tasting experience with unique wine pairings. The open wine selection has a minimum of six white and six red wines offered by the glass.
For special occasions, the best “Super Tuscans” appear on our Carta dell Esclusivita, including; Sassicaia, Ornellaia, Tiganello, 50 & 50, and Desiderio.
Sparkling wines (“bollicine”) from Northern Italy are available as well as artisanal beers. To appease every hotel guest’s taste, there is a small section of non-Italian wines.
Our signature grappa selection (premium brands) is displayed at the entrance of the restaurant in a special cabinet—ready for post-dinner enjoyment.

After dessert or with coffee, the Torrone cart arrives. A soft portion of this intriguing confection is spooned from a large block and served with the complements of the house.
The pasta served at Roberto's is made fresh, daily, on the premises. Filled pasta cushions are displayed in traditional wooden racks, presented tableside.

This Italian version of a T-bone steak isn't just amazing in taste-it also provides a bit of "theatre", as the chef takes it from the display and chops it off the bone before preparing.
Positioned near the entrance, a showcase of outstanding Grappa from Northern Italy (e.g. Poli and Berta brands) is at-the-ready for discerning patrons and as manager's treat for special customers.
Italians are serious about their espresso and so this iconic apparatus is on-hand, staffed by qualified baristas who ensure the best quality and preparation available-on-par with any café on the Via Condotti.
Roberto's wine list includes selections of a very high caliber. To turn the ordering of a great bottle into a festive occasion, special oversized glasses are brought to the table-with a flair-by convivial staff. Sparkling wines like Prosecco and Spumante are prominently displayed and actively recommended by staff through the service.
