Ingredients
1 | kg. | Fine salt |
1 | kg. | Rock salt |
4 | Egg whites | |
Mixed chopped aromatic herbs (bay, thyme, parsley, dill, sage, rosemary) | ||
4 | tbsp. | Grated lemon zest of 1 lemon |
1 | Fish, 1kg. to 2kg. | |

Preparation
- Whip the egg whites until firm.
- Add the chopped herbs and the grated lemon and mix well.
- Add the salt and mix again.
- Clean the fish and stuff the cavity with herbs, garlic and lemon.
- Brush the fish with oil.
- Lay on some of the salt crust and cover completely with the rest.
- Bake for 50 minutes at 375°F.
