Pesce in Crosta di Sale

Ingredients

1 kg. Fine salt
1 kg. Rock salt
4 Egg whites
Mixed chopped aromatic herbs (bay, thyme, parsley, dill, sage, rosemary)
4 tbsp. Grated lemon zest of 1 lemon
1 Fish, 1kg. to 2kg.
Garlic

Preparation

  1. Whip the egg whites until firm.
  2. Add the chopped herbs and the grated lemon and mix well.
  3. Add the salt and mix again.
  4. Clean the fish and stuff the cavity with herbs, garlic and lemon.
  5. Brush the fish with oil.
  6. Lay on some of the salt crust and cover completely with the rest.
  7. Bake for 50 minutes at 375°F.
