Tagliolini

Ingredients
90 | gr. | Fresh Tagliolini |
30 | gr. | Buffalo butter |
30 | gr. | Parmigiano Reggiano |
Preparation
- Cook the tagliolini few minutes.
- Put the tagliolini in a pan with some of the cooking water and the Buffalo butter.
- Simmer to reduce the water and emulsify the butter.
- Take off the fire, add the parmigiano and stir to dissolve.
- Serve immediately.
- Top with fresh truffles if desired.
