Tagliolini

Ingredients

90 gr. Fresh Tagliolini
30 gr. Buffalo butter
30 gr. Parmigiano Reggiano

Preparation

  1. Cook the tagliolini few minutes.
  2. Put the tagliolini in a pan with some of the cooking water and the Buffalo butter.
  3. Simmer to reduce the water and emulsify the butter.
  4. Take off the fire, add the parmigiano and stir to dissolve.
  5. Serve immediately.
  6. Top with fresh truffles if desired.
