Tiramisu

Ingredients

30 Egg yolks
6 Whole eggs
500 gr. Sugar
4 kg. Mascarpone
50 ml. Grappa

Preparation

  1. Put the whole eggs, egg yolks and sugar in a large mixing bowl and whisk on high speed for about 15 minutes or until the mixture is pale and fluffy.
  2. Place ⅔ of the mixture into a mixing bowl and set aside.
  3. Add the Mascarpone cheese to the remaining ⅓ and whisk until no lumps of cheese are visible.
  4. Slowly add the remaining ⅔ back into the mixture.
  5. Add the Grappa.
  6. Build the Tiramisu by soaking Biscotti biscuits in coffee and adding the cream in layers.
